I am sorry for neglecting you food blog :( I have been mighty busy. I want to make themes for each week and post food that goes along with that theme! I am super excited.

Buttermilk Biscuits

Ingredients
1 1/4 cup cake flour
3/4 cup plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup cold butter, diced
3/4 cup buttermilk

Preparation

( 1 ) Preheat oven to 250C.
( 2 ) Whisk flours, baking powder, and baking soda until well-blended.
( 3 ) Rub in butter with your fingers, until the mixture resembles coarse crumbs.
( 4 ) Pour in buttermilk, and stir lightly until the dough comes together.
( 5 ) Pat dough out onto a floured surface; 3/4 to 1 inch thick. Cut out circles as desired, and place the biscuits onto a baking sheet so that the sides are touching.
( 6 ) Bake at 250C for 8-10mins.

Lazy, 30-40 minute meal.

  • Boil Pasta, any kind you like
  • When cooked, drain and put in a mixing bowl
    (depending on how you like your pasta cooked, 7-12 minutes)
  • Mix in ricotta cheese, and you’re favorite pasta sauce
    (you can also mix in anything else you like. spinach, peppers, mushrooms, whatever)
  • pour in a acceptable size casserole dish.
  • cover top in shredded cheese
  • put in oven (325-400) for 15-25 minutes, or whenever cheese is baked.
  • Eat!

 

I think this is great!! Would be so good filled with veggies, chicken, shrip, or scallops. Super yum!

Breakfast Panini

This looks fantastic! I make one but I use Italian dressing, spinach, bacon, turkey, and sometimes cheese. Panini’s are really great and easy to make.

Grilled Pimento Cheese Sandwich

Ingredients
5 ounces organic white sharp cheddar cheese, freshly grated (not the pre-grated stuff which contains an anti-caking agent)
4 ounces organic cream cheese, softened (I stick it in the microwave for a few seconds, after I take the metal foil off of course)
Half of a 4 ounce jar of diced pimentos, with juice
2 garlic cloves, minced
1/4 teaspoon Dijon mustard
1/8 teaspoon ground black pepper
1/8 teaspoon paprika
1 – 2 drops of hot sauce
Whole-wheat sandwich bread
Butter for frying
Directions
Blend all ingredients (down to the hot sauce) together very well with a spoon or fork.
Can be served cold (as pictured to above) or continue with directions below for a hot sandwich.
Melt 1 – 2 tablespoons of butter in a sauté pan set just slightly higher than medium heat or use a griddle set at 375 degrees F.
Just after the butter has melted (and before it turns brown) rub one side of each piece of bread in the melted butter for full coverage.
Remove the buttered bread from the pan and spread a layer of pimento cheese onto the side of the bread that doesn’t have the melted butter on it.  Top that with another piece of prepared bread (non-melted butter side facing down) to make a sandwich.
Put sandwich back into the pan onto remaining melted butter and cook until golden brown on each side.
Yield: 5 – 6 servings

Turkiladas (turkey enchiladas)
Kind of like tacos, but not really. If you are already over the thanksgiving type of meals with your leftovers, this is a sure way to mix up your choices. Enchiladas are very simple to make and you only need a few basic ingredients. This link will provide you with an easy recipe, which is very similar to the way I make my chicken enchiladas. The best part, is that it only requires sour cream, cheddar cheese, tortillas, salsa and turkey meat. For maybe more authenticity, you could add cilantro, corn, and all the other herbs and spices that are in most mexican foods. For the tortillas, you really don’t have to dip them in oil for make them pliable. You could just pop them in the microwave for about 15-20 seconds, or even flip them a few times over an open flame burner on a stove (but make sure it is a low flame so you don’t burn yourself or the tortilla). The directions included in the link are very similar to the way I make mine, so I’m not going to waste my time or your time rambling how I would go about making them. Oh, and one more thing, if you want to liven them up a little bit, add jalapenos, black olives, onions, green peppers to the turkey meat mixture for more substance or texture. Save this recipe for the next time you have leftover chicken!
